As much as I have learned about diabetes being with Cy, I can't even pretend to say that I understand what it's like to actually be diabetic. So I wanted a place for Cy to be able to explain it to you in his own words. So without further adue...
Hello! I'm Cy and I love penguins.
I am the reason why this blog is called "No Pasta for Penguins."
I am an insulin dependent Type 2 Diabetic. I was diagnosed with diabetes when I was 15 years old, although I may have had Diabetes earlier than that. The history of the disease runs on my father's side. I have had my share of ups and downs with Diabetes. The fact that I was diagnosed toward the end of high school made things quite difficult for me. I was at an age where I thought I knew everything and that nothing, even Diabetes, would harm me.
Unfortunately, this mentality carried over into college, where I was all alone with my disease. Everything caught up to me. I was told by my doctor that I only had a few years to live in my present condition. I did not eat very well, I did not exercise nearly enough and I paid the toll.
From that moment on I decided to make a conscious effort to improve my life and to treat Diabetes seriously. I started to exercise regularly and even learned how to cook for myself. I wanted to avoid overly fatty and sweet foods served in restaurants as well as be able to control my portion sizes. With my lifestyle changes I have been able to maintain a normal blood glucose level (My last A1C was 5.7). Currently, I am a Graduate student trying to get my Master's in Mechanical Engineering. I spend my free time playing basketball and cooking.
I hope that everyone can find some benefit from the recipes on this blog. Here's to your health and to your ongoing fight with Diabetes!
